Why do lemons in the fridge always end up hard at the last minute?

I’m looking for lemon while cooking, and I come across a small yellow fossil. Is there anyone who can solve this in home economics?

I wouldn’t directly suspect malice here, but I wouldn’t throw away the comedic material in it either. Such things are like the absurd salt of everyday life. It has become a bizarre yet realistic concern that fits well in the Food & Drink category.
